Hey guys. I just discovered the "simplification levels" feature on the CAS mode, and I'm not quiet sure what it does. Could someone explain if possible, please?

You can find the levels defined on p. 51 (PDF p. 101) of the Prime User Guidel.

Most folks here are happy to help out if the information is not in the manuals, or a machine does not behave as described (there's plenty of both) but are most helpful for folks that are willing to do a little bit of research on their own before asking, and providing specific questions with specific things tried, unexpected results and what your expected results are.
